Not Your Average Salad
Summer time is a great time to visit your local Farmer’s Market and pick out some beautiful organic produce. One of my favorite summer time salads is this super-simple, fresh Italian salad, which is improved upon with the addition of colorful, flavorful heirloom tomatoes. When heirloom tomatoes are not available, substitute with vine-ripened tomatoes.
1 c. extra virgin olive oil
1/3 c. red wine vinegar
1 clove fresh garlic, minced
1 t. celery seed
1 T. Italian seasoning
Pinch of powdered rosemary
6 large heirloom tomatoes, any variety, cored and cut into wedges
1 large or 2 medium European cucumbers, sliced, seeded (a melon baller works well for this) and cut into ½ inch slices)
1 medium red onion, halved and thinly sliced
2 T. chopped fresh basil
1 T. chopped fresh parsley
For the dressing, in a medium bowl, whisk together vinegar, garlic, celery seed, Italian seasoning, and rosemary. Slowly drizzle in the olive oil while whisking. Season with kosher salt and fresh ground pepper to taste.
For the salad, toss together the remaining ingredients with the dressing. This is best if it is allowed to marinate for 1-2 hours. Add a sprinkle of your favorite crumbly cheese to add an extra pop in flavor.
